Paul Mathis successfully owns and runs Soulmama (vegetarian eatery seating 250 at St Kilda Sea-baths) and 100 Mile Café (all produce sourced within 100 miles of Melbourne CBD seating 120 at Melbourne Central).
In 2004/2005, he opened two establishments including - Transport Hotel housing Transit Lounge-Garden, Taxi Dining-Room, Transport Public-bar and Upper House Dining Room, Lower House Wine Bar at Federation Square. In 2002, Paul opened Chocolate Buddha at Federation Square, Soulmama in St Kilda and a myriad of other restaurants prior to this back to his first foray into the food industry when he opened Cerabona’s Pasta Deli in 1984 (now called Sam’s Eatery) that is still a popular eatery today.
